This is an inexpensive bread, good to go along with any soup or regular hot meal. Growing up we often had it with Chili and we like to put cheap pancake syrup on it. Make a double recipe; you can bake it in muffin pans. You can also add lots of different things to it e.g. cheese and chilies or left over cranberry sauce. Think of your own specialty.
INGREDIENTS
1 Cup Flour
¾ Yellow Corn Meal
2 Teaspoons baking powder
1/3 Cup Sugar
1 Cup Milk or Butter Milk
2 Tablespoons Vegetable Oil
1 Egg
METHOD
Mix everything together in a bowl. Pour into a small baking pan e.g. if you have a round pan for a layer cake, that’s about the right size.
Bake at 400 for about 20 minutes – the very edge of the top will turn a crisp brown color when its done.
