Shopping for Thanksgiving

Grocery Plan Just a warning - Thanksgiving can be very expensive. Consider having instant mashed potatoes, canned sweet potatoes with marshmallows, a frozen vegetable, Turkey, canned cranberries and pie. It might be cheaper to buy a ready-made pie. This avoids buying sugar, flour, and all the expensive raw materials – you only need to use a little of each and then you have a bunch sitting around. If you won’t use it all – don’t buy, go instant. Remember to leave enough time for your Turkey Breast to Thaw!! Below, I have listed each menu item with its ingredients and substitutions. Toward the bottom I have added a grocery list. What You Need For Each Recipe Golden Corn Cake Small box of corn meal – I like the round box that has a fitted lid. Golden Corn Cake

This is an inexpensive bread, good to go along with any soup or regular hot meal. Growing up we often had it with Chili and we like to put cheap pancake syrup on it. Make a double recipe; you can bake it in muffin pans. You can also add lots of different things to it e.g. cheese and chilies or left over cranberry sauce. Think of your own specialty. INGREDIENTS 1 Cup Flour ¾ Yellow Corn Meal 2 Teaspoons baking powder 1/3 Cup Sugar 1 Cup Milk or Butter Milk 2 Tablespoons Vegetable Oil 1 Egg METHOD Mix everything together in a bowl. Pour into a small baking pan e.g. if you have a round pan for a layer cake, that’s about the right size. Bake at 400 for about 20 minutes – the very edge of the top will turn a crisp brown color when its done.

Thawing and Cooking the Bird (followed by a recipe I found on line)

Once I invited a lot of people for Thanksgiving. I rented a table and table cloth, people brought their favorite dishes. I roasted the turkey -- but it wouldn't get done. I still am not sure what I did wrong --either the oven wasn't working or the turkey was somewhat frozen. Dinner was two hours late -- for Christmas my friend gave me a meat thermometer. Be sure to have your turkey thawed and if you have never used your oven try it out ahead of time. Bake some prepared cookie dough and see if they get done in the time specified. If the burn, your oven is hot -- if they don't get done, your oven is cold. You can also buy an oven thermometer. But then you don't get to eat the cookies. Thaw Turkey The best way to thaw the bird is in the refrigerator on a tray, allowing 24 hours for each 5 pounds; a 16-pound bird, therefore, will take a little more than three days to defrost. Easy Turkey Gravy

I like gravy. It is something someone should show you how to make if you have never done it. Use flour to thicken gravy, mix the flour with cold water first. Then add a little bit of gravy drippings to the flour mixture and stir it in so that there is some oil in the mixture -- that will help prevent lumps. Don't let the heat get too high -- that causes the flour mixture to bake in blobs. Instead let the drippings rest while you make the flour mixture, then add it to the drippings, stir it all in and then gradually heat it up. If you drippings are pretty dried up, add water and cook them off the bottom of pan, stirring. Then turn off the heat and begin making your flour mixture etc. You can add a little white wine to turkey gravy - red wine to beef. Mulled Hot Cider

Of course, you might have a little wine with dinner -- but grab a gallon of apple juice, cinnamon sticks and a few oranges. You can put a few raw cranberries in also -- cook it is your crock pot to make the whole house smell like a holiday. Do it early in the day and enjoy it all day long. INGREDIENTS • 1-3 (2") cinnamon stick • 5-10 whole cloves • 1 Orange, thinly sliced METHOD If you are making a small batch-use fewer spices, for a gallon use the max. Combine ingredients in a non-aluminum saucepan. Place over medium heat and bring to a boil. Reduce heat and simmer for 15 minutes. Serve in mugs

Candied Sweet Potatoes

CANDIED SWEET POTATOES INGREDIENTS 4 sweet potatoes 1/2 cup dark brown sugar 1/4 cup frozen orange concentrate 1/4 cup butter Baby Marshmallows METHOD Scrub and boil potatoes until tender, about 25-30 minutes, depending on size. Peel, then cut into 1 1/2-2 inch chunks. In an ovenproof casserole (or an aluminum foil loaf pan), melt butter with brown sugar. Add orange concentrate, stirring to combine well. Put sweet potatoes in the casserole dish and coat well with the butter/sugar mixture. Cover dish with aluminum foil to seal. Bake in a 350°F oven for 30 minutes, turning to baste potatoes with liquid every 10 minutes or so. After they are cooked, sprinkle with marshmallows and continue baking until the marshmallows melt and turn toasty brown. Note; You can use a can of sweet potatoes, Spread them in the pan, sprinkle with brown sugar then arrange marshmallows on the top. Bake until marshmallows are toasty brown. Submitted by: CM

Basic Mashed Potatoes

INGREDIENTS Choose inexpensive Russet Potatoes -- they should be medium sized. Prepare 2 to 3 potatoes person person, depending on whether you want left over. If you do not, cut down to about 1-2 per person. People eat more mashed potatoes than baked. METHOD You may peel and quarter potatoes a head of time. To keep them from discoloring, cover in cold water. It is also fine to cook them ahead of time , mash and then reheat in the microwave just before eat. Peel, quarter and cover with water. Boil until potatoes are just tender - that means you can easily stick them with a fork. Mash them with a large spoon and then use a hand mixer to whip. Add a little milk (carefully or you will have runny potatoes and there's no reverse) and butter. I like to add butter after I whip and then stir it in when it is melted. I don't mind lumps -- if you do, cook potatoes until they don't hold together when you poke them with a fork . Then drain very well and whip. No...
Vegetable and Ranch Dressing Dip With a small gathering, rather than making a hot vegetable, a salad and a relish tray with pickles and olives, make a veggie tray with dip. Ranch dressing is easy but you could choose a curry dressing if you like. Cranberry Sauce Recipe

INGREDIENTS 1 cup (200 g) sugar 1 cup (255 mL) water 4 cups (1 12-oz package) fresh or frozen cranberries Optional Pecans, orange peel, raisins, currants, blueberries, cinnamon, nutmeg, allspice. METHOD 1 Wash and pick over cranberries. In a saucepan bring to a boil water and sugar, stirring to dissolve sugar. Add cranberries, return to a boil. Reduce heat, simmer for 10 minutes or until cranberries burst. 2 At this point you can add all number of optional ingredients. We typically mix in a half a cup of roughly chopped pecans with or without a few strips of orange peel. You can add a cup of raisins or currants. You can add up to a pint of fresh or frozen blueberries for added sweetness. Spices such as cinnamon, nutmeg or allspice can be added too. 3 Remove from heat. Cool completely at room temperature and then chill in refrigerator. Cranberry sauce will thicken as it cools. Cranberry sauce base makes 2 1/4 cups.
