I like gravy. It is something someone should show you how to make if you have never done it. Use
flour to thicken gravy, mix the flour with cold water first. Then add a little bit of gravy drippings to the flour mixture and stir it in so that there is some oil in the mixture -- that will help prevent lumps. Don't let the heat get too high -- that causes the flour mixture to bake in blobs. Instead let the drippings rest while you make the flour mixture, then add it to the drippings, stir it all in and then gradually heat it up. If you drippings are pretty dried up, add water and cook them off the bottom of pan, stirring. Then turn off the heat and begin making your flour mixture etc. You can add a little white wine to turkey gravy - red wine to beef.
But for your first few times, try a short cut method -

Scrape pan drippings into saucepan, add a ½ to 1 whole can of cream of mushroom soup to the pan drippings, gently warm over low heat until bubbly. Only add enough water to bring gravy to the thickness you prefer. Add pepper to taste (should be salty enough).
